I have checked on ADS131M04's data sheet. But it has SNR value only at gain = 1 and 64. So what is exact number of SNR @gain = 8 and how can I find this number?

Generally the SNR and Dynamic Range are similar measurements. Dynamic Range is more of an idealized DC measurement, while SNR is an AC measurement with signal of 50Hz or 60Hz.
While the datasheet does not list an SNR measurement value for different gains other than 1 and 64, it does list dynamic range measurements over gain and OSR in the typical characteristics curves. I would say that the Dynamic Range is probably better than SNR by about 1-2dB. This is the case for 4kSPS data rate, but I'm not certain it follows for all data rates.
