Where could I find a Letter of Volatility for the ADC12DL3200? With the available documentation (datasheet, guides, etc.) I can't seem to find detailed enough information.

Alex,

If you are asking about memory volatility, then the ADC auto-loads its default register values at startup, some of these are backed by a FuseROM (e.g. trimmed parameters).

The startup section and register map provides details about this.

Jim,

I am looking for detailed memory information such as size and type (ROM, EEPROM, RAM, DRAM, etc... ). i.e, are the registers just RAM, and are their default values coming from some other NVM?

Alex,

The NVM is ROM based and all SPI registers are RAM based. This is the only information I can provide. Why do you need this?
