Can the ADS1292R be used with dry electrodes, MOhms each? We'd like to measure at least 2 channels of ECG simultaneously. We'd like a sample rate of at least 500Hz.

Long time no see!
The main issue with dry electrodes is that they do not form a secure connection to the patient and are prone to coming unstuck. You can think of the electrode contact with the body as having an impedance. The magnitude of this impedance is not the important thing, what is important is if the impedance is changing - i.e. the electrode coming slowly unstuck, leading to a continuous increase in impedance. This leads to issues such as DC baseline wandering and the measurement will not settle out until the impedance of the signal chain becomes a stable value.
