Additional inquiry related to this device, is it possible to configure some ADC pins as differential and some as single ended? And also if it possible to make a differential measurement using AIN1 and AIN7 or other ADC inputs.

Sorry for the delay in response. The reference can be switched at any time, but if it is switched during a conversion, the conversion will re-start similar to a MUX change from PGA, channel selection, etc. One thing to keep in mind when making this switch is the analog settling.
This ADC cannot be configured in this way, all measurements are made differentially. Due to the PGA common-mode limitations as outlined in the datasheet, the inputs cannot be connected to GND, making a true single-ended measurement not possible. However, a psuedo-differential measurement can be performed where one input is held at mid-supply and the other is measured with respect to that input.
The ADS124S08 is the new and improved version of the ADS1248. It is capable of making single-ended measurements by using the AINCOM pin. It also has a configurable delay to help remove errors due to analog settling from switching input channel settings.
