It doesn't even have any noise... I can't see why.

Based on your schematics, we do not recommend connecting channel 2 to the human body because there are no patient protection resistors and antialiasing filters.
When you ran the tests, how did you connect the channel or electrodes to the body? How did you set the bias voltage to the body?
Please ensure that the input common mode range of the front end is not violated.
Refer to section 8.3.4.1 in the datasheet for the usable input common-mode range for your configuration.
