Hi Bob,
The simplest method of calibration is a two point calibration. You would then use the two points to measure the slope and apply to the successive measurement results. In the end the formula looks like the line-slope formula where y = mx +b and m is the determined slope and b is the offset. The first point is a no load condition which is the 0 point for the measurement. The second point would be a near or full-scale strain applied.
If the calculation were specifically a load cell, then the calculation for determining the mass would be as follows:
