Essentially SN65 means industrial temperature range (-40C to 85C) and SN75 means commercial temperature range (0C to 70C) at least on RS-485 / RS-422 devices - I am not sure if there are exceptions in some of our other product groups.
They are essentially the same device - but we guarantee performance across a larger temperature range and our qualification is done at the higher temperature range for the SN65 variant. But if you were to switch the SN75LBC184 with an SN65LBC184 there really probably won't be too much of a difference in performance - if any really.
