How can I prevent unused output terminals from becoming a noise source? Is it okay to leave them open?

In general, it is recommended to add a termination resistor. (It increases power consumption, so you might want to test whether adding the resistor actually helps.)

Are there any problems if they are left open? (Are there any voltage fluctuations at unused output terminals?

The input signal will be visible at all outputs. It is possible for an unconnected pin to act as an antenna, but how much this actually matters depends on the board.

Hello,

There is only a single EN pin, meaning that all outputs will be seen.

As Clemens mentions, it would be best to terminate the unused output with a 100-ohm termination resistor.
