For example, if customer want to use 2*eUSB device in same I2C line, then they need to use different part number to distinguish different I2C address? can we achieve this by having some special pin assignment?

I would recommend following the EVM schematic for this application, with a .1uF pulldown and a 2.2Kohm pull-up:

For different I2C addresses, yes, you will need to reach out to the BU to have a device OTP'd with a different I2C address.
