Is it possible to connect these two pins (one input, one output) to the same node? Customer has run out of GPIO pins and needs to combine. He can set the pin as Input or output.

As long as the voltage and current are within the recommended operating conditions of the IP0 pin of the SN65HVS881 I don't see why you couldn't share a bus. Have you thought about using an I/O expander TCA4708 or a signal switch MUX508 since you have run out of GPIO?
