I would like to know the reference voltage of the input pin for single-ended input.

(What is the input pin voltage of the ADC when the signal is not input?)

What are the unused input pins?

(Open? Both P and N connected to GND? C-coupled to GND?)

Hello,

Are you planning on DC coupling the single-ended input? If you AC couple the input signal the product will properly bias the inputs on the device side of the AC coupling capacitor.

For more direct answers, the internal bias is roughly 1.45V. Unused analog inputs should be left floating.
