The barrier capacitance of the ISO7720 is ~0.5pF. The barrier capacitance (CIO) and isolation resistance (RIO) is shown below (section 6.6 in datasheet):
The barrier capacitance depends on various factors and can be different between other digital isolator devices. The isolation resistance remains the same across the different digital isolator devices.

I just want to confirm that the barrier capacitance (~0.5pF) and Isolation resistance are in parallel between two isolated ground nodes?

Yes, the barrier capacitance and isolation resistance are measured in a two-pin configuration.
Two-pin configurations is where all pins on side 1 are joined to make one pin and all pins on side 2 are joined to make a second pin. Then the barrier capacitance and isolation resistance are measured in parallel to those two pins.
