2. where are the unbonded gpios defined?

I can't find more information in reference Manuel or datasheet.

For unbonded IOs on a package would just follow the DS guidance. Please refer to section 6.5 of datasheet.

2. which pins are not bonded?

couldn't find the info from 6.5.

GPIOs that are in the Pinmux tables but dont have a pin associated with them on the specific package you are using.
