TMS320F28388D: Can CM use these unused peripherals RAMs as a general purpose RAM?

These RAMs are peripheral space hence can not be used like general SRAM. How are you planning to use them ?

primarily as a buffer memory with a read/write access. Especially interesting is the "direct access" note at the EtherCAT RAM. What does it mean?

Direct access is basically bypassing the EtherCAT internal logic to access the RAM so it's fast access and you should be able to use that to read/write the RAM .

So, the only RAM we can use is the EtherCAT one? CAN and MCAN RAMs are out of the question definitely?
And regarding the EtherCAT access: is there *any* example available how to use it in this way? Or can you give me some guidelines how to start?
