Just to make sure, Your demo board are using a 20MHz crystal.
- Using a 16MHz crsytal, I suppose that I can achieve the same performance as a 20MHz by setting the PLL correctly, is that correct?
- Is there a preference or condition of using a higher crystal speed compare to a lower speed or vice versa?

Yes, that should be the case. Assuming you want to use a 120MHz SYSCLK, you can multiply & divide down to 120MHz frequency with a 16MHz crystal.
Just note the datasheet specifications when choosing and designing with a crystal (i.e. load capacitance, ESR, etc.).
