I am looking for the best options in MCU to design an Attitude and Orbital Control System (AOCS) and I was readding about the C2000 series of TI.
Are there some antecedents of its implementation in this type of systems?

No, we certainly don't have an example of this specific application. It is very niche.
From a control point of view C2000 could be a fit at controlling 3 sets of axis (motors, actuators, thrusters) based on position sensor feedback.
But sorry, no higher level algorithms that TI can supply for the main control system.
