It's true that F28379D device is more than capable to run this, however we do not have a software example available or prepared. Typically our lower cost and lower performance devices are used for sensorless motor control applications.
May I suggest using our newer F28P65x device instead? It's very similar to the F2837x (200MHz clock) but has enhanced features, additional peripherals (like integrated EtherCAT), and lower cost.
We will have the Universal Motor Control Lab motor control example code which offers sensorless control for this device in our next Motor Control SDK release. This will use LaunchPad + Boosterpack hardware.
