I have a C2000 series F29H859TU-Q1. You have a motor control SDK(F29X-MOTOR-CONTROL-SDK) for this model, which includes an Encoder + PMSM example.

Can I control the induction motor directly using this example project using Encoder + ACIM? Or do I need to add additional control software for ACIM?

Also, is it mandatory to use FAST (InstaSpin module) to work as ACIM + Encoder in C2000 models that support FAST?

The PMSM solution doesn't have slip control logic. ACIM will need slip control logic to make the electric angle lead the rotator angle. In controlSUITE there are some codes for induction motor.
