    No such example file exist, you'll have to work on your own. Yes, if any difficulty faced while implementing : this forum's there to help you out.

    BTW which controller in C2000 series are you planning to use? These mcus have enough ADC channels to play with then why an external one?

    All the on-chip ADCs are consumed, plus we need 18bit ADC.

    Is there any similar I2C interfaces to an ADC documents ?

    Code for external ADC interface using I2C or respective doc is not available as I previously mentioned. controlSuite has a sample code for EEPROM interface and for documentation on I2C you can refer peripheral documentation.
