Yes, those are good resources, too. We also have a C2000 Teaching ROM available, though it is a little old. You can find it at:
I am not aware of any textbooks that are available. I did a quick search on the web, but did not find anything.

My book does not talk much about embedded programming but takes you through the tour on C2000 Devices with Lab examples. Do check the contents of the book. Here's the Book's homepage:
