    In my opinion, I answer your questions as following:

    InstaSPIN-FOC only includes FAST Estimator and Torque Controller based on Field-oriented Control (FOC) method. 

    InstaSPIN-MOTION is designed for motion control application, such as Velocity control and Position control. Morever, InstaSPIN-FOC also includes all features of InstaSPIN-FOC.

    According to your application, you should consider choosing InstaSPIN-FOC or InstaSPIN-MOTION. If your application don't require Position control you totally can select InstaSPIN-FOC for Torque control and Speed control (with traditional PI controller for Speed loop).
