Switch from Arduino to Launchpad

I've been using Arduino Uno and their motor shield, two 12 V DC motors from tetrix, and 180 deg Hitec servos along with various sensors for student robot building projects. I am interested in switching to TI launchpad for a more robust solution since we were having problems with overheating. I am wondering if making the switch is fairly easy, what launchpad mcu is recommended with plenty of room for sensors (using arduino uno students ran our of pins for all the sensors they wanted especially after losing so many for motor control). According to the lift-off with launchpad it looks I should use Energia for software development. Here's some mcus I am considering: F28069M, F280049C, EKTM4C1294XL, F28377S (not available for ordering), and a booster pack to drive two motors, DRV8848. Thanks for your help in advance.
