Continuing the question, I've checked the documentation and in "http://www.ti.com/lit/sprs880" on "Table 4.3 - GPIO Muxed Pins", I found this:
GPIO14 -> EPWM8A (O) / SCITXDB (O) / MCLKXB (I/O) / OUTPUTXBAR3 (O)
In "http://www.ti.com/lit/sprui77" on "Table 8. F28379D LaunchPad Pin Out and Pin Mux Options - J8, J6", I found this:
GPIO14 -> OPXBAR3
So, this meaning even though the Launchpad documentation don't show the EPWM8A on your "Table 8", do I can configure the pin to work like a PWM?

You are correct. See the first paragraph of Section 6.1 as well as note 1 on each of the Tables 5 through 8 in SPRUI77.
The per-pin usage is up to you. The TI BoosterPack standard is just a way to standardize the basic requirements for compatibility between boards. If you are making your own design or just learning the device, you obviously can manipulate the pin-mux as necessary to yours.
