When I am watching the AdcMirror.ADCRESULT2 in the IDE watch window, what am I seeing?
I had been assuming that the A to D was showing milli-volts, but that does not match my other instruments.

Hi William,
The ADC Module converts the analogue voltage you apply to the ADC input into a 12 Bit digitized value. So what you see in the ADCRESULT Registers is a value between 0 and 4096 corresponding to a voltage between 0 and 3.3V respectively.
Best regards
Andreas

Andreas is correct. One note though, you don't mention which device you are using. If it is a 280x, 2833x, for example the ADC range is 0-3.0V. While on 2803x and 2802x the analog input is 0-3.3V. You mention the mirror registers so I believe it is one of the 0-3.0V devices.
Please refer to the ADC manual for your particular device for more details.
