My customer is looking for the C2000 solution offering the best jitter performance. Any collateral on this parameter across our families, would be welcome.

I do not have definite answer for you, but I can give you a high level summary on how the Jitter numbers on F28375S looks like.
Period Jitter = 50ps.
Period jitter is calculated using 6sigma values from spectrum analyzer by bringing out the PLL clock on XCLKOUT.
