Is there documentation specific to using I2C for C2000 / F28379D? For example, something that includes the register maps?

Hi Matthew,

Most of the documentation for the F28379D can be found on it's product page.
http://www.ti.com/product/TMS320F28379D

The datasheet will provide the pinout, details on the various devices described in the datasheet, and much of the electrical specifications.
The Technical Reference Manual (TRM) describes the features of the device family in great technical detail, including the peripherals & their register descriptions.

From a software perspective, the examples within C2000Ware can be a great place to get started.
