For the TMS320F28335, is it possible to configure the SPI module for serial communcations and configure the McBSP to provide additional SPI ports?

Yes, this is possible - it is called McBSP clock stop mode. But note that the SPI slave frequency will be much slower when using the McBSP in SPI mode (see data sheet electricals for McBSP speed limiations in SPI mode).
