Specifically for C2000 what you should do is 

install controlSUITE and peruse all the device examples and Library/Kits documentation: www.ti.com/controlsuite

Read the wiki: http://processors.wiki.ti.com/index.php/C2000

For general C programming, many of us refer to C Programming Language by Kernighan and Ritchie - it's not very long but covers many of the basics in ANSI C programming . I've also heard others use C: How to Program by Deitel & Deitel.

As Chris mentioned above, the best way to see how the C2000 team programs work is to go through the workshops and look at some of the basic example programs in controlSUITE.

Hey Jan, if you're looking for specific learning material to start with the c2000 MCUs then the c2000 teaching rom is the best place to start. It has tons of examples and also includes exercises on getting started with the CCSV4.
