TI supports some I2C examples, but I'm going to use the GPIO instead of I2C module.

Can I get the I2C example using GPIO?

No, unfortunately the only I2C examples we provide are those that use the I2C peripheral. I imagine if you do a search for "bitbang I2C" you should be able to find something you can port to the F28377S though.
