I have a question regarding the 2.2uF caps that the data sheet says to add on the ADCREFx pins. What effect would using a 1uF cap on these pins have on the ADC readings/functionality, specifically when operating at 200°C.

The capacitors are relied upon to filter out voltage reference noise so I would expect that a smaller cap value might degrade the ADC accuracy to a certain extent. We don't have a practical way of modeling the exact effects. This tendency to degrade would apply at any operating temperature. I would not expect the ADC control logic / state machine to be affected.
