I am testing the SPI variant of this chip for this eval board and I have a question. If I wanted to, for some reason, use digital halls in analog hall mode, can I just tie HNx pins to GND?

The best method is to bias HNx to AVDD/2 using a resistor divider, so it is a known common mode voltage (i.e. 1.65V). Tying HNx to GND means when HPx = 0V, the device may not compare that Hall signal correctly as "low".
