The datasheet for the DRV8703 indicates that you should not put more than a 1nF capacitor on the SO output pin. But later states that this pin is capable of sourcing up to 5mA. What is the reason for the 1nF limit?

Thank you for your question.
Less than 1nF is required stable operation of amplifier, not related to sourcing current capability. The bigger cap makes ramp of SO slower.
