Is it possible to use the Flying Start feature in the InstaSPIN-MOTION lab project because I want to use SpinTAC speed controller instead of PI speed controller ? And if yes, how to do that ?

Yes, that's ok, you just port the flying start function from InstaSPIN-FOC lab into InstaSPIN-Motion lab, keep checking the rotor position always, even the motor is stopped. Please take a look at the instaSPIN lab guide first which includes all the content that should help you to port the code.
