I was wondering if the UCC29910A can be used for 3 phase operation with a standard bridge. Assuming for now that the voltage is within the operating range, will having the AC waveform 120 degrees out of phase instead of 180 degrees cause an issue?

It is not recommended to use UCC29910A in 3 phase operation. I would be concerned about scaling the LINESNS pin to an appropriate value at max AC input limiting how low you can set the output bus voltage and giving poor power factor correction.
