If we set the output current 75mA, is it correct the current accuracy is +/-5%?
And the worse case the output current may go up to 75mA x (1+5%) = 78.75mA ?

Correct, the output current accuracy for 75mA setting is +/-5% which means that the current could maximum reach 78.75mA. You can for example see Figure 6-6 in the datasheet where at lower supply voltage the current is a little higher, but at the maximum supply voltage the current is a little lower. Under any condition mentioned in the datasheet (e.g. supply voltage range, temperature range), the accuracy will stay within this range.
