I am looking for a +/- 1.25V precision voltage reference solution for MCU. Does TI have an IC that will give you +1.25v and -1.25V precision voltage references?

You can use the REF35125 as a precision (±0.05%) 1.25V reference. Please see Figure 10-1 on page 22 of the data sheet for a reference on how to create both +1.25V and -1.25V rails.

REF35125 , shows 0 qty available at both Digi-Key and mouser. Is this a new design? If possible, can you recommend both a series and shunt reference solution?

Yes, the REF35125 is currently in preproduction.
If you need it sooner than that, please look at using the REF2025 or REF3312 and follow the same circuit as in the REF35 data sheet.
With a shunt reference, you can use the TLV431B and flip the circuit over ground (provide it with a negative reference).
