In slvuc05a.pdf, Figure 1-3 shows that the the chip will return 'Byte Count' to show how many bytes following. But as the Table 1-1 already gives the 'Data Bytes' of each register, does it means the chip may return 'Byte Count' less than what the Table 1-1 gives?

No, the chip will return "Table 1-1 # of Data bytes" + 1 byte containing the byte count, where N = # of data bytes. The total bytes returned will be N + 1.
Table 1-1 provides a summary of the registers.
For example, when you try reading from the Status register over I2C, you will need to read 6 bytes.(# of Data bytes + 1(Byte count)).
