This device can no longer be ordered. For obsolete or surplus TI product Rochester Electronics https://www.rocelec.com/ is a good resource, however it doesn't appear to be orderable here either.

I looked into this further and I was able to locate the modern, active equivalents for this device. So yes, they are still active and being sold. From the datasheet you linked:

I looked online and could only find the 1984 TI databook, which does not list those SN part numbers. See pages 471 and 636 (6-169) in this link:

The 1984 databook and the 1973 datasheet you provided sure do look the same. The only real difference I can see is the comment on the first page:
1984 databook:
"Direct Replacement for Fairchild uA723M and uA723C"
1973 datasheet:
"Designed to be Interchangeable with Fairchild uA723 and uA723C Respectively"
I glanced at the different datasheets and electrically speaking, the LM723 appears to meet the same specifications as the SN52723, but I cannot guarantee that other differences remain. If the customer has purchased the LM723 they can see the list of PCN's associated with it, if any, over the years.
