I've seen in the datasheet that the PG voltage is 0.5V (when driven low) under a 5mA load, however, I can't see any information regarding the maximum current that the PG pin can sink?

/PG is an open drain output and we do not test for max sink current. From the description shown in the parametric test condition VSAT=500mV and ISINK=5mA. This implies a pullup resistor R_pu=(5V-0.5V)/5mA=900Ω bur it's more typical to use something near 10kΩ.
