I'm looking for programmable current driver with a 1mA -> 500mA range. I wonder if there is a problem with running the LP5861T with parallel ouputs. Is there any reason I can't do this?

If I understand the datasheeet correctly, each output is good for 1mA-125mA. So 4-parallel ouputs whould give me the 1mA-500mA range that I am looking for. I don't know the driver behind the outputs, so I can't tell if tying them together will be a problem.
