In section 4 Charge Pump (and FET Turn On) of the Multiple FETs with the BQ76952, BQ76942 Battery Monitors (Rev. A) application note there is a formula that can help you find the appropriate value for the charge pump capacitor. Overall, the capacitor determines the initial voltage drop when the FETs are initially turned on.
The turn on delay for the FETs can not be changed, the FET status is updated every 250ms. This means the FET may have a delay to turn on of at most 250ms. However, turn off time can be decreased. You can refer to section 5 Parallel FET Test Circuits of Multiple FETs with the BQ76952, BQ76942 Battery Monitors (Rev. A) and section 2.7 How can I achieve faster gate turn-offs for DSG? of BQ769x2 Frequently Asked Questions for more information.
