I am using BQ34Z100 IC to monitor my battery. If I'm changing the battery used and replacing it with a new one, can I change or reset the cycle count to 0? How can I do so?

What reasoning are you asking about this? If it is for a repair you can simply replace the cells and the Qmax, FCC, SOH, Ra tables and etc would update after a couple of charge and discharge cycles. However within BQStuido this is a parameter that you should be able to write to within the Data memory using a EV2400.

Since the datasheet says that the cycle count is a read only command, How can I change the value or reset the if i am replacing the battery with the same specification will it automatically reconganize the new battery. Also if i want to program ba34z100 with an ESP32 module or another IC in using wifi.

You could re-flash your gauge with the golden image and it should reset the cycle count on your gauge and yes it would be able to recognize the new impedance of the new battery.
