Hello. Is there any advantage to using a Cref capacitor bigger than the 5µf specified in the datasheet of the LM723? I have seen some designs using much higher values.

A larger Cref will provide better PSRR (especially at low frequencies) and noise compared to a smaller one. A larger Cref may be paired with a smaller Cout for the same PSRR performance.
The other reason to use a larger nominal value is with a worse rating is to keep effective capacitance above a minimum across the operating region, mainly for cost reasons.
It is not necessary, and the device will work perfectly fine even without one.
