    The Zenner diode is attached in order to avoid that the LED anode voltage goes GND level.  LED is sensitive to reverse voltage bias. The reverse voltage can be reduce by the zener diode. Big current zener diode is not required. But the diode maximum current should be more than VLED/resistor value. Zener voltage should be less than LED forward voltage.

    when we want to have a zener as voltage regulator we normally use this configuration:

    Why in this case do you use a resistor in series with the zener? I can't see very clearly how does your configuration work? Can you show me an exaple?
