I recommend upgrading the firmware to the bq34z100-G1. The firmware nd bqStudion program can be downloaded from the bq34z100-G1 website. The -G1 device will support PbA cells and some gauging improvements have been added. The bq34z100-G1 datasheet has a step-by-step design section to help with configuring the gauge for your application.

The bq34z100-G1 has replaced the bq34z110 device, so you should use the bq34z100EVM. You can also reprogram the bq34z110EVM with the bq34z100-G1 firmware and the firmware and bqStudio can be downloaded from the bq34z100-G1 website.

If you are using the bq34z100-G1 device, then you can use either EVM. If you are using the bq34z110 device (firmware), then you must use the bq34z110EVM.

I have ordered bq34z110EVM and EV2300(convertor) but these are not deliverd now.
But as I told you, you had mentioned about bq34z100-G1 several times.
I do not know why you did. It makes me confused.

In brief, I want to know how to set bq34z110EVM board.
With these conditions, do I have to change something on the board?
Otherwise, do I should add up some circuit such as voltage drop?

The bq34z110 is no longer recommended for new designs and has been replaced with the bq34z100-G1. The bq34z110EVM will be removed from the website and it may be out of stock. The EVM was replaced by the bq34z100EVM.

Your battery stack voltage is 27V, so you will need to set the J2 jumper to 32V and the J5 jumpers to the >5V positions. There is a step-by-step procedure for configuring the EVM in the bq34z100EVM Users' Guide. It can be downloaded from the bq34z100EVM website and can be used with either EVM.

Figure 8 in the datasheet does not include the jumpers that are included on the EVM. You should use the bq34z100EVM User's Guide. It is available for download from the bq34z100EVM website.

I wonder what is "protection". Is it one of part that I should use or could I ignore that?

I am not sure what protection you are referring to. The gauge does not control the FETs, so it cannot provide protection against current or voltage faults.

Did you look at "Figure 1. bq34z100 Circuit Module Connection to Cells and System Load and Charger" at bq34z100EVM User's Guide? If you had looked into, you might know what I had mentioned.

The Protection block in the Figure is provided by another device such as the bq77908a. Most packs will have an cell monitor that controls a set of charge and discharge FETs and the cell monitor will open the FETs in the event that a safety fault occurs. The bq34z100-G1 and its EVM do not provide any protection.
