Full Bridge DC/DC Converter controlled by UCC28950

Providing that the power stage is designed for that power level then the UCC28950 controller can control a 30V / 100A output.
You may want to think about designing a 1.5kW power stage and paralleling the two of them - the UCC28950 provides a SYNC pin to allow synchronisation between the two power stages - this will reduce the current ripple in the output capacitors.

in our case it seeks to obtain a power of 3 kW (100A, 30V) in  the output ,from an input voltage of 200V, you can send me the schematic that gives it

I'm sorry but I don't have a suitable schematic. There is a typical UCC28950 schematic at the product page for the EVM user manual at www.ti.com/.../sluu421a.pdf . There are a number of reference designs available at 1.5kW and higher including www.ti.com/.../PMP6712 www.ti.com/.../PMP11302.1 but not all of these use the UCC28950. I hope this helps get you started.
