I know that we can see buffered voltage or current via IADPT, IBAT and PSYS, then can we connect these pins to reduce GPIO line from MCU?

The datasheet gives the IADPT, IBAT current capability spec: 1mA. PSYS can be set to 1uA/W. Please compare them to you GPIO port or MCU ADC input pin leakage current. And then, you can know it can be connected to those pins or not.
How about read them out from bq25703A ADC register?
BTW, in light load, converter runs in PFM to keep higher frequency. In PFM, the IADPT, IBAT and PSYS may show more ripple. You may want to add a filter on those pins if you want to use them in light load.
