Can we read the data from eeprom when we want , not keep always read the data ?

Can it be done ，by pull clock pin low？

The UCD3138 family contains data flash which can be used in some cases to replace external EEPROM. Are you referring to that? If you are, you just read from data flash like it is memory, because it is. You can even execute from it.

If not, you must be referring to external EEPROM? The UCD3138064 and some other family members can be used to interface to both I2C and SPI EEPROMs. Certainly with either of those, you only read from the EEPROM when you need to. The UCD3138064 Programmer's Manual has our best description of how to do this.
