Are there any issues with individually gating each LED with a nFet? or conversely leaving one of them unused?

You mean you want to add external nFET to control each LED individually? It's ok with this way. Can you tell me your application information? I can recommend new device to you?
Vin range;LED configuration?Iout?Diming mode?Other demand?

I'd like to have individual PWM and enable for each led.
