I do have another question regarding the GATE pin. The datasheet says that the maximum voltage on GATE is 7.5V. But this cannot be correct ! If this part uses an NMOS FET as its switch, its gate voltage would need to be greater than 20V to turn ON this FET if I undersatnd how FETS work. Is my interpretation of this specification in error?

Your understanding is correct. For N-Channel FET's , the Gate voltage has to be greater than the Source Voltage.
As you can see in the Datasheet 'ELECTRICAL CHARACTERISTICS' section, the Gate Output Voltage is specified as 'GATE-OUT' voltage which is the gate to Source Voltage.
If the Vin raises, the Gate Voltage also raises maintaining V(GATE-OUT) around 6.6V.
